Marinated Chinese Chicken Salad Crockpot Recipe



Ingredients needed for the marinade:

* 3 cloves of minced garlic
* 1 tablespoon of fresh ginger, grated
* 1 teaspoon of dried red pepper flakes
* 2 tablespoons of honey
* 3 tablespoons of low-sodium soy sauce
* 6 boneless, skinless chicken breast halves

Ingredients needed for the dressing:

* 1/2 cup rice wine vinegar
* 1 clove of garlic, minced
* 1 teaspoon of fresh grated ginger
* 1 tablespoon of honey

Ingredients needed for the salad:

* 1 large head of iceberg lettuce, shredded
* 2 carrots, julienned
* 1/2 cup chopped roasted peanuts
* 1/4 cup chopped cilantro
* 1/2 package maifun noodles, fried in hot oil

Preparation steps:

* Mix marinade ingredients in a small bowl.
* Place chicken in crockpot and pour marinade over chicken, coating each piece well.
* Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
* Remove chicken from crockpot and cool. Reserve juices. Shred chicken into bite-sized pieces.
* In a small bowl, combine the dressing ingredients with 1/2 cup of the juice from the crockpot.
