Apple Cranberry Upside-Down Cobbler Crockpot Recipe



Ingredients needed:

* 4 cups of chopped apples
* 2 cups of cranberries, thawed
* 3/4 cup of granulated sugar
* 1 teaspoon of ground cinnamon
* 1 teaspoon of grated orange zest
* 1/4 cup of freshly squeezed orange juice or port wine

Ingredients needed for crust:

* 1 cup of all-purpose flour
* 2 teaspoons of baking powder
* 1/2 teaspoon of salt
* 1 tablespoon of butter
* 1/3 cup of milk

Preparation steps:

* In a bowl, mix together apples, cranberries, sugar, cinnamon, orange zest and juice. Pour into prepared baking dish.
* Crust: In a bowl, mix together flour, baking powder and salt. Using your fingers, rub in butter until mixture is crumbly. Add milk, stirring to make a soft dough. Roll out on a lightly floured board, or pat using your hands, to fit the top of the baking dish. Place over fruit, pushing dough down the sides of the dish to ensure that fruit mixture is completely covered.
* Cover dish with foil and secure with a string. Place dish into crockpot and add boiling water to come 1 inch up the sides. Cover and cook on high for 3 hours, until a toothpick inserted in center of topping comes out clean.
* When ready to serve, run a knife around the edge of the cobbler. Place a serving dish or platter over the top of the dish, invert and unmold.
