Chicken Chili Crockpot Recipe



Ingredients needed:

* 1 medium onion, finely chopped
* 1 small jalapeno pepper, cored, seeded and minced
* 1 small garlic clove, minced
* 1 1/2 teaspoons of medium-hot chili powder
* 3/4 teaspoon salt
* 1/2 teaspoon of black pepper
* 1/2 teaspoon of ground cumin
* 1/2 teaspoon crushed dried oregano
* 2 cans of hominy, drained and rinsed (15 1/2 ounces)
* 1 can of pinto beans, drained and rinsed (15 ounces)
* 1 1/2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
* 1 cup of chicken broth
* 1 tablespoon of all-purpose flour (optional)
* Chopped parsley or cilantro, for garnish

Preparation steps:

* Combine onion, jalapeno, garlic, chili powder, salt, pepper, cumin and oregano into crockpot.
* Add hominy, beans, chicken and broth. Stir well to combine. Cover and cook on low for 7 hours.
* If thicker gravy is desired, combine 1 tablespoon of flour and 3 tablespoons of cooking liquid in a small bowl. Add to crockpot. Cover and cook on high for 10 minutes.

Serve in bowls and garnish as desired.
