Fiesta Beef Bowls Crockpot Recipe



Ingredients needed:

* 1 1/2 boneless beef top round steak
* 1 can of diced tomatoes and green chiles
* 1 medium onion, chopped
* 2 garlic cloves, minced
* 1 teaspoon of dried oregano
* 1 teaspoon of chili powder
* 1 teaspoon of ground cumin
* 1/4 teaspoon of salt
* 1/4 teaspoon of pepper
* 2 cans of pinto beans, rinsed and drained (15 oz.)
* 3 cups of hot cooked rice
* 1/2 cup of shredded cheddar cheese
* 6 tablespoons of sliced ripe olives
* 6 tablespoons of thinly sliced green onions
* 6 tablespoons of guacamole

Preparation steps:

* Place round steak into crockpot. In a small bowl, combine the tomatoes, onion, garlic and seasonings; pour over steak.
* Cover and cook on low for 8 1/2 hours or until meat is tender.
* Remove meat from crockpot. Add beans to tomato mixture. Cover and cook on high for 30 minutes or until beans are heated through.
* When cool enough to handle, slice meat.
* In individual bowls, layer the rice, meat and bean mixture. Top with cheese, olives, onions and guacamole.

Serve and enjoy
