Warm Blue Crab Bruschetta Crockpot Recipe



Ingredients needed:

* 4 cups of peeled, seeded and diced Roma or plum tomatoes
* 1 cup of diced white onion
* 2 teaspoons of minced garlic
* 1/3 cup of olive oil
* 2 tablespoons of balsamic vinegar
* 1/2 teaspoon of dried oregano
* 2 tablespoons of sugar
* 1 lb. lump blue crabmeat, picked over for shells
* 1 1/2 teaspoons of kosher salt
* 1/2 teaspoon of cracked black pepper
* 1/3 cup of minced fresh basil
* 2 baguettes, sliced and toasted

Preparation steps:

* Combine tomatoes, onion, garlic, oil, vinegar, oregano and sugar into crockpot.
* Cover and cook on low for 2 hours.
* Add crabmeat, salt and pepper. Stir gently to mix, taking care not to break up crabmeat lumps. Cook on low for 1 hour.
* Fold in basil.

Serve on toasted baguette slices and enjoy.
